Batter

  • 1 lb/454 g drained ricotta cheese
  • 8 eggs

Method

  1. For the batter, combine the ricotta, eggs, sugar, rum, orange juice, zest, baking powder, salt, and flour thoroughly, adding more flour as needed.
  2. In a deep-fryer at 350°F/177°C, fry 1-tbsp/15-mL fritters until lightly browned and cooked through, 2 to 3 minutes.
