Making a smooth white sauce is easy, as long as you don’t rush it when you begin to add the milk. A white sauce is used in many dishes, so it really is worth mastering the technique.

Melt the butter in a saucepan, stir in the flour and continue stirring over a low heat for 1 minute. Remove from the heat and gradually add the milk, a little at a time, mixing it in well. Once you’ve reached the stage when the sauce has become a smooth, thick liquid, start increasing the quantity of milk you add each time, stirring until it is all incorporated.
