Herring is a fish that we neglect rather foolishly. It has the most delicious, rich flesh, is sold at a bargain price, and is also incredibly good for you on top of all the rest. The traditional Scottish way to cook it is rolled in oats — the oats cook to a crisp, making a nice contrast to the soft fish. If you are making this for more than one person, you will find that one egg is enough to coat two or three fish.
