Lamb Chop with Mint and Garlic

Another quick way to jazz up a plain chop. It is simply spiked with mint (or you can use the leaves of a sprig of fresh rosemary instead) and slivers of garlic before grilling. This is excellent served with a simple sauce made from thick yogurt mixed with chopped fresh herbs, salt and pepper.

Ingredients

  • ½ garlic clove
  • 2 leaves of fresh mint, or ¼ teaspoon dried mint</

Method

Preheat the grill to high. Cut the garlic into long thin slivers. If using fresh mint, cut it into strips. If using dried mint, toss the slivers of garlic in the mint to coat.
