Even though I’m not that fond of peanut butter, I love these biscuits. They are sweet and crumbly and ooh, another one please. Use crunchy peanut butter, not the smooth sort, so that you get pleasing nuggets of peanut dotted through the biscuits.

Preheat the oven to Gas Mark 5/190°C/375°F. Cream the butter and sugar together until light and fluffy. Gradually beat in the peanut butter, then the egg and the vanilla essence. Sift the flour with the salt and bicarbonate of soda, then mix it into the peanut butter mixture.
