This is a truly heartwarming winter pudding - a layer of apple topped with a light sponge. It doesn’t take very long to make and is best eaten straight from the oven, though it can be kept warm for a while. A larger pudding can be made simply by doubling or trebling the quantities as appropriate, but unless you have a food processor this means a lot of hard arm-work. You may need to cook a larger pudding for 5—10 minutes longer — judge ‘doneness’ by touch not time.
