This is probably the world’s quickest ever ice cream. It is important to choose a good quality jam with a high fruit content, such as an ‘extra’ jam or conserve. Apricot jam makes particularly fine ice cream, but other flavours give good results too. Before you throw it together, make sure there’s enough space in the freezer compartment of your fridge to take the finished ice cream.
