Though the name suggests a salad, this is actually one of the quickest of dips to throw together. It’s based on tahina, a sesame seed paste which can be bought in jars. Before you measure out the quantity of tahina needed, stir it well to re-mix the oil which will have separated out. Don’t worry when the tahina seizes up like cement; as you continue adding liquid and beating, it will smooth out again. This dip can be made up to two days in advance and stored, covered, in the fridge. Serve w
