  • 6 medium eggs
  • 6–7 cherry tomatoes, chopped
  • 2 tbsp chopped coriander (cilantro) leaves

Method

Whisk the eggs in a bowl, then add the tomatoes, coriander, green chillies, spring onion and salt and stir to combine.

Heat the ghee or butter and oil in a frying pan over a medium heat. When hot, add the cumin seeds and fry for 30 seconds until they splutter.

Add the garlic and fry for a further 30–40 seconds until it is lightly browned. Add the egg mixture and scramble for 1–2
