My earliest memories of Ramazan (the period of fasting for Muslims) are of my mother and I preparing iftar (a feast to break the fast at sunset). No iftar was complete without her dahi baras – cotton wool-soft lentil dumplings adorned with cool whipped buffalo yogurt. The nutty aroma of the lentil fritters being fried and then immediately plunged into water (which according to my mother ensures a softer fritter) takes me straight back to those days.
