This mutton pulao is what’s traditionally known as ‘yakhni’ pulao (yakhni is a spiced meat or poultry-based stock), and in these pulaos the rice is cooked in a stock using the absorption method (as opposed to cooking rice in water and draining it). This dish can be both a festive and everyday dish, and is an ideal one-pot meal that can be served with a raita or salad.
