This simple recipe for spiced pulao is made into something extra special with the addition of beef meatballs that are adorned with silver leaf for an eye-catching effect. The idea is that they’re supposed to resemble pearls, and the recipe is known as ‘motti’ (pearl) pulao in my home. The silver-leaf can be left off, of course.

Ingredients

For the meatballs

  • 300 g/10½ oz beef mince (ground beef)
  • ½ tsp

Method

Wash the rice, rinse and soak in a bowl of water for 1 hour, then drain.

Mix all the ingredients for the meatballs together in a bowl then divide the mixture into golf ball-sized balls. Heat the oil in a frying pan over a medium heat and cook the meatballs in batches for about 15 minutes, or until cooked through. Remove and set aside.
