The rather scaly karela is an acquired taste. It’s unpleasantly bitter if not prepared well, but if cooked correctly it’s a vegetable with an ability to absorb any flavour without losing its voice. You can also try this recipe with hollowed courgette or pepper if karela doesn’t appeal, and the daal can also be replaced with pre-cooked keema.
