“Coloured Garlic” Dip

This sauce or dip from Almería is traditionally served with poached fish, but is also delicious with grilled meats or vegetables. It can be stored in an airtight container or jar for 3–4 days in the refrigerator.

Place the potatoes, onions and red pepper in a large saucepan and cover with vegetable stock (bouillon). Bring to the boil and simmer for 15–20 minutes.

Meanwhile, put
