Since I have included sushi rolls and nigiri-zushi using beef, I have created this recipe for a matching basting sauce.

Ingredients

  • 1 tablespoon vegetable oil for greasing the pot
  • ½ pound ground beef

Method

Set a medium cooking pot over medium-high heat and pour in the oil. When the oil is hot, swirl it around and add the ground beef, stirring with a wooden spatula to break it up. When the beef is no longer rosy, add the sake and mirin. When hot, add 1 cup of water and the sugar and cook for 10 minutes over medium-low heat, constantly skimming off any foam that rises. Add the shoy
