Brown rice is not a good choice for sushi rice. It is impossible to make nigiri-zushi with it because it is too firm and its nutty flavor and brown color are not what is expected in a delicate sushi. Brown rice can be cooked until tender, but then it becomes too mushy. Some health-conscious food stores and supermarkets today, however, are carrying rolls made with brown rice, in which the nori sheet wraps around the looser brown rice and holds it inside.
