As I have noted, numerous rolls have been invented in America using ingredients that were unheard of in the Japanese sushi kitchen. Usually such innovations occurred out of necessity. When chefs could not find authentic ingredients, they had to rely on what was available locally, such as avocado, salmon, packaged unagi no kabayaki (prepared eel), and cream cheese. In this New World Roll, I combine sushi salmon, eel, and roe.
