This cherry blossom celebration sushi is my creation to celebrate our New York spring and cherry blossoms. I toss the sushi rice with locally available springtime ingredients from the farmers market—shelled peas, fava beans, and fiddlehead ferns—and I decorate the sushi with a gimmick: some little daikon radishes, lightly dyed and cut to resemble cherry blossom petals.
