During cold weather, treating yourself, friends, and family to a steamed sushi is a great pleasure. This one is better prepared with freshly made sushi rice, but you can use day-old, firm sushi rice. Here I top the rice with prepared eel, thin omelet, and green peas and serve it in about 1-cup heatproof bowls— a lovely appetizer to start your dinner party.
