  • 1 fillet of very fresh, parasite-free sushi or sashimi salmon with skin

Method

Salt curing

Spread enough sea salt to thickly cover the bottom of a large shallow dish. Dredge the salmon in the salt and let it stand with the salt for about 30 minutes. Remove the salmon from the dish and rinse off the salt under cold running tap water. Wipe it dry with a paper towel.
