  • Ma-dai (red sea bream), 4-pound size, ike-jime slaughtered
  • Sea salt

Method

Filleting

Rinse the fish thoroughly under cold running tap water, being careful not to stab your fingers with its very sharply pointed fins. Place the fish in a large clear plastic bag to keep the scales from flying about as you remove them. Working with your hands inside the plastic bag, remove the scales with a fish scaler or the tip of a deba knif
