This is another delightful dish you can make using the octopus that you have cooked for your nigiri-zushi dinner. Here I serve thinly sliced octopus with frisée (salad greens whose leaves are finely spiked, so that they hold the dressing effectively) drizzled with a tosazu dressing. Tosazu is a rice vinegar dressing with katsuobushi fish flakes added for a robust flavor. Choose an onion that has a mild, sweet flavor, such as Vidalia.
