I introduced you to the preparation of namban in the preceding chapter. Any fresh vegetables taste wonderful done this way—asparagus, eggplant, bell peppers, endives, radicchio, fennel bulbs, zucchini flowers, mushrooms. Use your own imagination and what is available. Everything must be very fresh and in season, so that the cooking time is short, preserving the full flavor, aroma, and color of each vegetable. The prepared dish tastes better after it has been refrigerated overnight.</
