When midsummer comes, light green okra, one of my favorite vegetables, appears in many dishes in Japan. If you have never cooked okra before, try this dish for a start. It is a simple, quick recipe that does not encourage the okra to produce its distinctive sliminess but rather helps it maintain a pleasantly firm texture. If okra is not available, use other vegetables such as string beans, bell peppers, or asparagus.
