Cabbage is good for our health, but it is bulky and hard to eat raw. So I quickly stir-fry it with brown miso. Cooking intensifies the sweetness of the cabbage, which is balanced with the salty miso. It is a simple and hearty dish. You can add carrots, bean sprouts, Chinese chives, or scallions for extra color, flavor, and texture.
