This modern kabocha soup is especially good during cold winter months. Kabocha squash is a turban-shaped dark green squash that originally came from South America but today is largely known as a Japanese vegetable. Its bright orange flesh becomes smooth, creamy, and very sweet when it is cooked. Adding ginger juice to this soup will drive away the winter chill.
