In addition to the summertime enjoyment of eating boiled edamame (green soybeans) accompanied by a cold beer, you can make a delicious and attractive edamame soup. This is the kind of soup that cools your body and offers good nutrients when your appetite is down during the hot, humid summer. I add a dash of crème fraîche, which gives the soup an attractive contrasting appearance—stark white against the deep green.
