This dessert uses arrowroot starch, kuzu, a popular sweets ingredient in Japan. Arrowroot starch, among all other starches, produces the clearest and stickiest mixture when cooked. As a small child, whenever I began to catch cold or was running a temperature, my mother would make me a home remedy of slightly sweetened arrowroot starch soup.
