Hosetsu literally means “light snow.” This is a stunning-looking double-decker, two-colored—green and snow-white—chilled dessert. The upper snow-white layer is composed of egg white that has been beaten to a fluffy foam and jellied with agar-agar. When you bite into this part, tiny bubbles of egg white foam burst and quickly disappear in your mouth. The lower green layer is made from kiwi and jellied with agar-agar and Western-style gelatin.
