You often see hamachi (farmed yellowtail from Japan) carpaccio on the menu at sushi bars and high-end seafood restaurants. So let’s make an appetizer one notch up. Kanpachi (farmed amber-jack) is very similar to hamachi; however, it has a firmer texture and tastes cleaner. Hamachi is very rich in oil whereas kanpachi is less so, which enables you to taste the flavor of the fish. (Oily doesn’t mean tasty. Tasting its oil and tasting its flavor are two different things.)
