This is a good entry roll for those new to sushi because no raw fish is used; instead, we used unagi kabayaki (grilled farmed freshwater eel). You buy the unagi grilled and frozen. I recommend looking for one that is 7 to 9 ounces (200 to 255 g) in size; larger ones tend to be chewy (the bigger the fish, the thicker the skin).
