Sometimes we fry seafood in a style called tempura. This deep-frying method is known for its beautiful flaky coating. The most common seafoods to use are shrimp and soft-shell crab, but you can also use this method on vegetables. Remember, tempura is about steaming the core of the fish or veggies while sealing the outside with batter. The inside will continue to cook for a couple of minutes after it’s removed from the hot oil.
