Vegetable sushi has been around in Japan for centuries. For the Japanese, fish and chicken were the only animal proteins until the late nineteenth century. The Japanese people used to consume (and still do) lots of vegetables, local to each area. Here we use cucumber, green bean, gobo (burdock), and avocado for a variety of textures and color.
