Ikura is my kids’ favorite seafood. They like the “pop” in their mouths and the saltiness. In recent years, the cost of good-size salmon roe has risen substantially. A pair of ikura nigiri at a restaurant used to be $4, but now it’s between $7 and $8. So, I make my kids eat an ikura bowl (ikura over sushi rice) first to fill their bellies and then let them order ikura nigiri pieces.
