Obviously you can use many types or combinations of vegetables and meat in both white and red miso soups. One of my favorite vegetables to use is gobo, or burdock root. It is commonly enjoyed in Japan in miso soup and in salads (marinated in sesame oil) and infused into tea (zero caffeine). Rich in antioxidants and soluble fiber, it is said to help us retain warmth in our feet and hands in cold weather. Burdock root has a comfortable, earthy scent and is mild in flavor.
