Ponzu is a citrus-based sauce used in Japanese cuisine as a marinade or an addition to soy sauce. It is made by boiling rice wine, rice vinegar, dried bonito flakes, and seaweed and then straining and infusing with a Japanese citrus fruit, such as yuzu. When soy sauce is too assertive to allow the subtle flavors of white-fleshed fish, such as fluke and red snapper, to come through, citrusy ponzu sauce is a great alternative.
