This is what sushi chefs brush onto your nigiri sushi. To me, it has a more “rounded” flavor than store-bought soy sauce. It contains mirin, sake, and, sometimes, dashi, but I don’t use it here because the dashi can overpower the delicate flavor of sushi if your nikiri doesn’t come out perfectly. Each chef makes nikiri a little differently. Boil the soy sauce to eliminate any impurities and the alcohol.
