Some people like to add salt cod to Fry Aloo. To do so, boil ½ pound boneless salt cod in water for 20 minutes. Drain and shred salt cod into small pieces. Heat a frying pan with 2 teaspoons canola oil and add the salt cod, frying until lightly browned. Remove from heat and using a slotted spoon, add cooked salt cod to the cooked potatoes before serving.
