The term “chokha” actually refers to any dish of vegetables roasted over a fire or scorched in hot oil, then mashed into a paste, and usually eaten with roti. Although it has of late become synonymous with something simply “mashed.”

Ingredients

  • 2 large Italian eggplants
  • 1 tablespoon canola oil
  • ½ medium onion, chopped

Method

  1. Prepare a hot grill or preheat the broiler.
  2. With a fork, pierce the eggplants all over and place on the grill or under the broiler. Grill or broil until completely charred and soft, about 20 minutes, turning frequently (the eggplants will brown and blister quickly). Remove and allow to cool.
  3. Once cool, cut open the eggplants and scrape out the flesh. The
