These sweet-tart balls of cooked green papaya remind me of all-natural gumdrops.


  • 4 green papayas, peeled, seeded, and grated
  • cups sugar plus additional for rolling
  • 1 teaspoon grated lemon zest
  • 2 tablespoons freshly squeezed lime juice


  1. Place the grated papaya in a clean dish towel and twist the towel to squeeze out about half of the juice from the papaya, roughly ¼ cup of liquid. Discard the juice.
  2. In a large saucepan, combine the papaya pulp, sugar, lemon zest, and lime juice. Bring the mixture to a simmer and cook, stirring, until it has a jellylike consistency, about 15 to 20 minutes.
  3. Remove the pan from the heat and cool slightly. With wet hands, form the mixture into 2½-inch balls and roll in sugar. Store in a plastic container in the refrigerator.
