Sugarcane wine, made from free running sugarcane juice can be compared to a light agricole rum—although it is faster to make and the alcohol content is lower.

Ingredients

  • 6 cups sugar
  • 3 pounds sugarcane, peeled and chopped
  • 1 teasp

Method

  1. Place all ingredients in a sterilized gallon jar with 3 quarts (12 cups) of water. Seal tightly and store in a cool, dark place for 10 days.
  2. Strain the liquid and place in a clean bottle. Store for another 2 weeks in a cool, dark place. Sugarcane wine keeps refrigerated for up to two weeks. Serve cold.
