Another Victorian-era confection, bull’s eyes are slightly sour because of the addition of tartaric acid, which contrasts well with the deep caramel taste of the brown sugar. The pulling of the syrup lightens it, as air is incorporated; pulling half of the mixture and leaving the rest brown creates the two colours.

Ingredients

  • grapeseed or groundnut (peanut) oil, for greasing
  • 425 g/15 oz/scant

Method

  1. Grease a marble slab, a metal scraper and a pair of kitchen scissors. Prepare an ice-water bath. Preheat the oven to 150°C/300°F/Gas 2.
