Kids love fizzy, sweet-yet-acidic sherbet, and it is very easy to make at home. You could even recreate a childhood classic combination by making the Raspberry Lollipops to dip in the powder. This combination evokes nostalgia on both sides of the Atlantic.

Ingredients

  • 500 g/ lb/ cups caster (superfine) sugar
  • 15

Method

  1. Put the caster sugar into the bowl of a food processor or blender, and blend until the sugar is in extremely fine crystals. This should take a few minutes.
  2. Transfer the sugar to a large mixing bowl, and add the tartaric acid or citric acid and the lemon or orange extract.
