This rich, deep and dark toffee recipe comes originally from New Orleans. Its French-Creole name is La Colle, which means ‘glue’; when made correctly, it should have a luxuriously thick and very smooth texture, interspersed with crunchy pecans.

  1. Preheat the oven to 160°C/325°F/Gas 3. Spread the pecans out on a baking sheet and place in the oven.
