Like golden cinders from the fire, this toffee is an old favourite in many parts of the world. It is known by many names, including yellow man, puff candy, hokey pokey, sponge candy, sea foam and angel food candy. To make it into an extra-special treat, dip the toffee pieces into melted chocolate and allow them to set.

Ingredients

  • butter, for greasing
  • 60 ml/4 tbsp water
  • 225 g

Method

  1. Prepare an ice-water bath and a jug (pitcher) of warm water large enough to hold your sugar thermometer. Grease a shallow baking tray and set it aside.
  2. Put the water in a heavy pan and add the sugar and golden syrup. Heat gently until the sugar dissolves.
  3. Increase the heat and bring to the boil, then boil, without stirring, until it reaches just above
