It is the addition of bicarbonate of soda that gives brittle its unique texture. The raising action introduces thousands of tiny air bubbles into the sugar syrup, making it crunchy and airy. The stretching process also adds air and gives the brittle an almost opalescent quality.

Ingredients

  • grapeseed or groundnut (peanut) oil, for greasing
  • 175 g/6 oz/scant

Method

  1. Line a baking sheet with parchment and grease it lightly.
  2. Combine the sugar, golden syrup and salt with 60ml/4 tbsp water in a large, heavy pan. Heat the mixture gently over a low heat until the sugar dissolves.
  3. Turn the heat up to medium and boil until the syrup reaches the hard-ball stage (130°C/266°F).
