This timeless classic is a smooth fudge that is not worked. Instead it is simply melted to the perfect temperature and poured into a tin to set. This version uses dark chocolate, which cuts through the sweetness of the sugar, but you could use milk chocolate, if you prefer.

  • 800 g/ lb/4 cups caster (superfine) sugar

Method

  1. Grease a 20 x 30cm/8 x 12in rectangular baking tin (pan) and line with baking parchment or waxed paper. Prepare an ice-water bath.
  2. Put the sugar, milk and butter in a large, heavy pan and cook over a medium heat, stirring constantly, until the sugar has dissolved.
