Scotch tablet is a hybrid of fudge and toffee that dates back to the early 18th century in Scotland. It has a grainy texture, similar to fudge, but is harder. Traditionally it was made using just sugar and cream, but since this has a tendency to burn, the recipe has been adapted over time to incorporate sweetened condensed milk.

  • 900 g/2 lb/ cups caster (superfine) sugar

  1. Grease a 20cm/8in square baking tin (pan) or 23cm/9in square baking dish, and line with baking parchment.
  2. Put the sugar, butter, water and milk in a heavy pan and stir over a low heat to combine.
