This recipe has a wonderful texture: fudgy tablet bursting with fig seeds and vanilla seeds. Tablet works well with any dried fruit, but this particular combination is lovely. Try dried apricots or prunes, if you like. Do not use fresh figs, as they hold too much juice and the tablet will not set properly.

Ingredients

  • 100 g/ oz/ cups dried figs, chopped

Method

  1. Grease a 20cm/8in square baking tin (pan) or 23cm/9in square baking dish and line with baking parchment.
  2. Place the chopped figs in a small bowl and cover with about 50ml/2fl oz/¼ cup boiling water. Set them aside to soak for about 30 minutes.
