Wonderfully fluffy and delicious, home-made marshmallows are nothing like the store-bought version. The texture is completely different because these are meant to be eaten within days, rather than months, and are not full of preservatives. You can add many flavours and colours – the possibilities are limitless.

Ingredients

  • vegetable oil, for greasing
  • 50 g/2 oz/½ cup icing (confectioners’) sugar

Method

  1. Grease a baking tray. Combine the icing sugar and cornflour in a mixing bowl. Pass the mixture through a sieve (strainer) into another bowl positioned underneath to ensure it is well mixed. Liberally sift some of the mixture over the greased baking tray.
